HOBO TILAPIA

There are many "HOBO Spice" recipes but after tweaking a few I have found that this is the most delicious one by far. It is very low in fat and every time I make it even my younger daughter who is not a big fish eater cleans her plate.


2 Tablespoons of Paprika
1 Tablespoon of Onion Powder
1 Teaspoon of Black Pepper
1 Teaspoon of White Pepper
1 Teaspoon of Cayenne Pepper
1 Teaspoon of  Dried Thyme
1 Teaspoon of Dried Oregano
1/2 Teaspoon of Celery Seed
1/4 Teaspoon of Garlic Powder
* Optional 1 teaspoon of Salt or Low Sodium Salt


4 Pieces of Tilapia (1 pound)
1 Tablespoon of Vegetable oil
Juice of 3 Lemons

Wash Tilapia at pat dry
Mix all dry ingredients in a bowl and then spread onto a plate. Coat fish on both sides with the dry rub mixture

Heat  large skillet over High heat. Add oil until almost smoking then place fish in pan. Cook about 3 minutes on each side.
Remove fish from pan then take the lemon juice and put in pan while still hot and scrap bottom of pan with the lemon juice. This creates a delicious sauce that you then pour onto each piece of fish.




SWEET AND SPICY COCKTAIL NUTS


Here is a great recipe if your going to a party, having a party or if you just like to keep a yummy snack around the house. These are far better when served warm but I like them anyway I can get my hands on them. A new outlook on a average nut.

1- 11.5 oz can of mixed nuts Lightly salted or no salt added
1 Tablespoon of coarsely chopped fresh Rosemary
1/4 Teaspoon of Garlic powder
4 Tablespoons of Brown Sugar
3/4 Teaspoon of Cayenne Pepper
1 Tablespoon of Sea Salt (more or less depending on the type of nut you select)
3 Tablespoons of melted unsalted butter

Preheat Oven to 350 Degrees
Spread nuts on baking sheet and roast in oven for 10 minutes
Combine all dry ingredients in big mixing bowl
Right before the nuts are done melt your butter
Remove nuts from sheet tray while there are still hot and put them in bowl with
dry ingredients and pour melted butter over them, mix and enjoy.
                                       
* You can always create your own mixture of nuts by your preference or whats on sale.
